Hi,

Welcome to Roman PizzaLab! You are officially enrolled in the 2-day immersive Roman PizzaLab workshop on April 6–7, and we are excited to work with you in person.

This training is designed for pizzeria owners, operators, and professionals who want to execute Roman-style pizza with precision, consistency, and confidence. You will train hands-on with Massimiliano Saieva and Rob Cervoni, and begin a mentorship path that supports your growth beyond the workshop.

Dates: April 6–7
Location: Taglio Pizza

Arrival Time: Please arrive by 8:30 AM
Class Starts: 9:00 AM

Dress Code

Please wear:

  • Closed-toe, non-slip kitchen shoes
  • Comfortable work clothing

We will provide aprons and caps for all participants.


Travel & Lodging Guidance (Courtesy Suggestions)

By Plane

  • The closest airport is Long Island MacArthur Airport (ISP) (approximately 30–40 minutes by car).
  • You may also fly into JFK or LaGuardia (LGA), both about 1–1.5 hours from Massapequa Park by car or rideshare.

Lodging

There are hotels near Massapequa Park and in nearby towns such as Amityville and Farmingdale. We recommend booking your accommodations as soon as possible.

Parking

Free on-site parking is available behind Taglio Pizza.


Online Portal & Mentorship

You will receive a separate email shortly with access to the Roman PizzaLab online course and community portal.

Once the workshop is complete, your 12 months of weekly mentorship with Massimiliano will begin inside the portal, supporting your path toward becoming a Certified Roman PizzaLab Instructor.
